Wish Lantern’s Christmas Recipes

With only a few days left until Christmas it’s time to get cracking on those yummy Christmas treats. Whether you’re hosting the Christmas dinner at your place or heading to someone else’s there’s no reason why you can’t amaze your guests with some delicious cooking! Here at Wish Lantern, we love to cook especially at Christmas time, so here are a couple of our favourite Christmas recipes:

What you need:
2 ripe avocados, halved, stones removed, peeled
2 tsp fresh lime juice
1 small red chilli – deseeded and finely chopped
Salt and ground pepper
1 x 300g ctn sour cream
1 tbs taco seasoning
1 ripe tomato -  quartered, deseeded and finely chopped
1 tbs coarsely chopped fresh coriander
Corn chips, to serve

What you do
1. Place the avocados in a large bowl and use a fork to mash until almost smooth.
2. Add the lime juice and chilli.
3. Spoon the avocado mixture into 2 small serving bowls and smooth the surface.
4. Combine the sour cream and taco seasoning in a medium bowl.
5. Spread a thick layer of the sour cream mixture over the avocado mixture and cover with plastic wrap and place in the fridge for 2 hours to set.
6. Combine the tomato and coriander in a small bowl.
7. Taste and season with salt and pepper.
8. Sprinkle the tomato mixture over the sour cream mix and serve straight away with corn chips.

Boozy Sauce for Plum Pudding

What you need:
125g unsalted butter
225g dark brown sugar
1 egg
65ml port
65ml medium-sweet sherry
600ml thickened cream

What you do:
1. Melt butter in a saucepan over medium heat.
2. Add sugar, stirring to combine well, then add egg, port and sherry, whisking for 2 minutes over medium-high heat to dissolve sugar.
3. Seal in a jar, allow to cool, then refrigerate until ready to serve.
4. To serve, whip cream until soft peaks form, then fold into sauce.
